Passionfruit, lime, mint and rum cocktails

I love a cocktail and I every now and then can't resist indulging in my favourite Moscow mule or raspberry mojito. But I have to admit, I rarely make cocktails at home. With most cocktail recipes, the ingredients lists are extensive and a lot of things are often difficult to get hold of. The closest I get to a homemade cocktail is rum and ginger beer, but I'm sure that doesn't count! When my mum and I (both huge fans of rum) saw this cocktail recipe in the March issue of Sainsbury's Magazine, we had to give it a try.


We didn't have a lot of the ingredients to hand - I don't think many people have fresh lemongrass and pure cane sugar lying around in their kitchens! We had to buy most of the ingredients and this got pretty pricey. I confess that the student in me was thinking that I can get a pint for £2 when we picked up 4 passionfruits for the same price!



We followed the method, and the result was a fresh and deliciously tangy cocktail that definitely packed a punch! This cocktail is perfect for any special occasion and would be an absolute winner in the Spring months.
